Subject: naked portafilter
 

Hi, I just bought a naked portafilter and seem to be having a few problems with it pouring out consistently. I'm using it on a Gaggia pure and I am using the tamper that came with it.
Does anyone have any tips for when using one?

Naked portafilter will show any flaws in your preparation.  That is one of the main reasons to use a naked portafilter - so you can see if you have distribution problems/channeling in your coffee puck.

Search the forums for such techniques as WDT and nutation ... though there are plenty of folks who don't do any of these techniques and still manage to grind, dose and tamp in such a way that they get consistent pours with a naked portafilter.

Having a very good grinder is key for getting uniform particle size. Using a scale (or some other method of dosing a consistent weight of coffee into your basket) is also important. How you distribute the coffee into the basket, the type of basket and many other factors are important.

I'm still learning and I've been at it for months now with a naked PF.

^ everything Andy said!  and to reiterate...the main reason to have the naked pf is to illustrate problems with your process, and then as you make (hopefully) minor changes, you can see improvements.  once you get your process dialed in you'll enjoy the send reason to have a naked pf, which is because it looks really cool to see your shots coming out just right.

I think one of the best troubleshooting tools available is the ...guide to better espresso... on www.espressomyespresso.com  it's article #12 under the how-to links on the right side of the main page.  The author frequents this site as "frcn".  I've used this document several times to re-evaluate my process.

Tom, you said "the tamper that came with it."
If you mean a plastic tamper, you need to lose that immediately, and purchase a proper SS tamper.
As you list yourself as a "Pro Barista", I'd assume you'd know this?

That said, you'd also know that proper distribution is even more important than the tamp. However, a tamper that doesn't fit the basket will leave you open to the dread edge channeling.
