I haven't read anything about burrs wearing out quickly. It may happen but I haven't read about it. Where did you see this?
The Rocky is a fine grinder (I have one). Not the best, sure, but not bad. I want to love the Baratza's and contemplated switching but there seem to be way too many reports here about problems with them.
Haven't seen the weather change anything either, myself. As w/ the burr wear it may be an effect but I haven't seen it. I keep my beans in a vacu-vin container, maybe that helps.
I tend to vary between 7, 8 and 9 on my rocky depending on the bean used. I keep a small notepad nearby as I test settings so I know what to go back to when I change beans. When you feel like you have a good setting for a particular coffee I recommend you still give it a bump either way (1 finer, 1 courser) so you can see and taste the difference. You may even find a better setting, or at least realize that where your'e at is best.
Other threads I have read say they are pretty bullet proof.. guess time will tell.
At the moment I have it set between 11-12, with a reasonable tamp, its just starting to blond at 20-25 seconds, with very thin streams... extraction starts brown, and little if any bitterness. This did confuse me because I have read many people set it between 7-9 as you have. I thought perhaps it was due to it being new and having no wear.
I will try bumping it and have also been recommended to vary the tamp pressure on different settings to help fine tune... Its all new but at least the coffee tastes nice :)
