I just recently made some modifications to my grinder and machine in order to try and make some better espresso, I managed to un-pressurize my cuisinart em100, and I did a step-less mod on my skerton to increase my grinds consistency. I think i may have the grind close to were it needs to be but I am unsure. I filmed a recent extraction and was wondering if i could get some opinions on it. I think that it tastes good right now, I am just looking for anything that can make it better. I am shooting for a nice ristretto. Here is the video http://www.youtube.com/watch?v=n3V1osY3F8I

Well, not be wing familiar with your machine, I'dsay off hand your grind is a bit too fine. I'd ;like to see pour from a pump machine in 10 seconds or so after initiation. Not a hard and fast rule, but I'd see drips at 4 seconds from my QM Anita HX (a much more expensive machine than yours, however). and a steady pour by 10-12 seconds after I lifted the little lever.
That said, seems you're getting real espresso from your little machine. You're doing something right! BTW, your yield certainly fits the requirements of a ristretto...20-25ml or so?

I agree with Robert's diagnosis, you're grinding too fine.
IMHO a steady flow should start at 5 to 7 (10 at most) seconds after turning on the pump, extracting 25 to 30 ml in around 25 seconds (counting from staring the machine) for a single shot.

Thanks for the help, i loosened my grind up a bit, overshot the first time, but now i am getting 25-30 sec extractions with a steady flow from about 5 seconds in.
