I am curious as to how much in grams are most people putting in their portafilter for a double shot.
I have been playing around with brew pressure (set at 9.5 bar) tamping pressure, bean type, grind and temperature and am consistent in each aspect now and i get a pretty good shot, however i feel like it's not amazing and it could be improved. I then decided to weigh out the amount I am using and i found that i have been using 21 grams for my double shots. Maybe this is one reason why my shots aren't at their best. I have a 51mm single wall basket and I am going to try different amounts to see what tastes better.
But as a guideline, I was wondering how many grams most people are using for their double shots?? I know it depends on the individuals taste, but i'm just asking as a guideline to help adjust my dosing.

I daresay 21 grams is right smack in triple territory.
I'm running about 14-15.5 gram doubles, on a 49mm basket, lever machine. Can't get nary a speck more than 15.6 in there, and only with the lightest of roasts (for whatever reason).

Thanks for the input. I'm just about to experiment with 16g dosing.
Does the dose size affect the amount of caffiene in the shotaAs i have been using a high dose and a coarser grind. Or now i will have to grind finer will it extract more/less caffiene, or are they both about the same??

I use 20 grams of coffee in my double shots. I know it's close to triple, but the 20 grams yields a stronger shot that holds up well in milk. I tend to pull them at 2.5 oz, though, or whenever they start to blonde.

It's really coffee-dependent. Some (such as Spella's Brazilian Espresso) taste best to me at 14g-15g while others work best closer to 18g (e.g. Deep Cello's Nostromo), with still others liking up to 22g (Ristretto's Beaumont).
This can also be affected by age, since it's not unusual to pull a different weight at the beginning of the coffee's post-roast life than at its end (assuming one subscribes to modifying the dose - not the optimal grind - to adjust for age and conditions over time).
