It looks like a good product, though.
I tamp to about 30lbs of force, or a little less than 14kg. The one thing you should do that I've done in the past is keep certain variables constant, ie change the grind type, keep constant tamp force, etc.
With the grind that I have set right now, it pours espresso in about 25-27 seconds, at 30lbs of tamp. At 40lbs it chokes the machine.
It is an interesting approach they have taken with the Dual Gauges and once you get use to the way the machine works, it tells you all you need.
I got may hands on and EM7000 and had a closer look inside. Having worked on and repaired many many EM6910 systems I was interested to see what Sunbeam did. At the end of the day the EM7000 is significantly cheeper than the BES900 from Breville and many get caught between NEEDS vs WANTS Vs the sales person.
At the end of the day, The EM7000 produces as good as my Commercial 2 group AND Minore III etc when using Quality beans band a good grinder. And importantly almost no change in grind size. But as the beans age; or if using supermarket beans etc. then its all over red rover as each machine will require changes to grind/tamp etc to pull that great shot....

This is an older thread but having it brought back up, I took a look at the EM7000. Sunbeam is not a popular machine in the U.S. so I looked around a bit online. I discovered it is a thermoblock system, using a PID control.
Thermoblock machines tend to have very bad temp regulation and though this one uses a PID to monitor temp, I am not sure how stable it truly is. Just use caution when looking at any machine. Based on specs alone and not having used one, I would tend to shy away from this machine as any thermoblock machine I have used (though without PID control) was not worth taking the time to look at.
I guess I am saying, when boiled down, I would look in other places and at other machines first before buying this one. YMMV!
