How much caffeine is in a standard 2 oz espresso shot. In other words, how much caffeine is in my double shot latte? (each shot is 1 oz) Is there more caffeine in a cup of coffee?
I drink coffee/lattes at 4pm, and I've noticed when I drink my latte, I have no problem going to sleep by 12, but if I drink a full 10-12 oz of coffee, I can stay up as late as 4am. Is there THAT big of a difference in caffeine?
I ask because I plan on experimenting with a biphasic sleeping schedule and want to schedule my coffee so it does not interfere with sleeping

Does anyone know if the amount of caffeine extracted into an espresso based mostly on the grind, specific bean, extraction time, or other? Will there be more in a ristretto shot or a normal espresso (assume same weight of beans is used in both cases)? Based on this can one say that the caffeine is extracted at a certain point in the pull (i.e., at the start or at the end)?

I would think the caffeine presence reflects a logistic model. There's probably a lot more caffeine in the first seconds of extractions vs. the last seconds. And I've heard it varies mostly with dosage and bean origin/roast. Lighter roast have more caffeine, darker roasts less.
