Thanks guys. I think I'm going to increase the dose to 16g as a starting point and then go from there aiming for extraction of 25s and have a play with the different brew ratios until I find one I prefer. I guess I thought that maths could be used to work out the perfect espresso (setting all the variables to predefined values) but what I think I'm understanding is that it's a massive case of trial and error, changing the variables one at a time until you find the shot of espresso YOU like for the bean you're working with. Then, log those variables and use those values to allow consistent shot pulling for all future espressos (with that bean)???
it's never that easy but i would still consider it easy after you get your routine down.
coffee constantly changes from each batch to batch, day to day, hour to hour. generally i like to have a range i know will typically give me the taste im looking for and then calibrate to hit it. i'm guessing this is for your shop so you want your baristas to taste and check the settings every so often. Adjust if needed.
i just pulled a shot of streetlevel from verve(about 12 days post roast) 18g in, 27g out...the top of my crema was maybe 8mm from the top of the demitasse. there is no way i'd be able to fit 56grams in my cups ha

Thanks for all your help guys. Spent a few early mornings working with the machine and have made the changes. Working on a 17g dose, 28g brew weight and extraction between 22 - 27 sec region. This gives a brew ration of 1.65 (ish). Huge difference compared to the 14g in and 56g out! Tastes a lot better without the harsh aftertaste. See what the regulars make of it now........
Wow, I am new to the game as well, and you guys sure are not making this easy! From <1.5:1 to 4:1, everybody says their pull is perfect and delicious. Guess there's an awful lot of latitude for personal preference...
