I just got myself a Eric Thermometer and installed on my DD. I tried to read the brewhead temperature from the Eric Thermometer and it gave me a total different result when flushing and brewing. Here's my setting, 1 hour warm up, PID=92C, Offset=10C, brewhead temperature=86C.
a) Without portafilter and flushing, temperature went up to 96C and drop to stable 92C. b) When actual brewing 30 second 19g coffee, temperature went up to 96C and drop to stable 85C.
In order to obtain the brewhead temperature at 92C, I need to increase the PID to 98C and during the brewing cycle, the max temperature at the brewhead reached 100C and quickly drop to 92C throughout the whole 30 seconds brewing cycle.
I know the theory that due to the restriction of the coffee puck and brewhead temperature drop. So the question is should I maintain the PID according to the flushing or brewing?

To answer your last question, with a question, do you drink your espresso from the flush or the brew? If a pid would make a difference on my machine and if I had one, that is where I would take the readings from.:-)

I flush until the temp reaches an indicated peak temperature then stop the flush. How do I know what that is? A bit of practice taught me. After that, I don't look at the thermometer. I don't care what it shows during the brew. I only care about the taste of the espresso. I have the offset adjusted so that the display shows the temperature of the flush temperature's peak previously mentioned. That also is about the same peak temperature that is indicated during the flush. If you are concerned about the brew temperature at the coffee you will need to invest in a Scace device or similar tool. Other than that, ignore the temperature change during the brew cycle and use taste as the only indicator as to what adjustments need to be made. One man's opinion.

discussing about temperature measurements in the brewhead (E61 in my Bezzera Magica), is it true that the displayed temperature does have significance only during the time the brewing valve is open, that is the water is flowing over the sensor? do you use the values indicated on the brewhead thermometer while the machine is idling? is there some consistency from machine to machine, as the sensor is only in hot air? thank you...
