Regarding grind settings, you'll find that everyone's grinder is slightly different - by "everyone's grinder" I mean everyone's Preciso - so saying 7E doesn't necessarily translate to an equal particle size distribution on someone else's Preciso. You'll also find that different beans/blends need different grind settings. For the Ethiopian...is there a one way valve on the bag? If there is, it would allow CO2 to escape. Did you open it slowly or quickly? Sometimes when you open bean containers slowly, the pressure release is too quiet to hear.

I think that the pressure reading is probably correct, the initial and your set. Look back at the May 10 post and you can check your result with the flow/backflow method, but probably not needed other than the academic exercise. Oh, that's right, you need academic exercise :) It is really about the cup and consistency and seems that you have the proper "prescription."
Try working the output down to 1 - 1.5 oz weighed or volume measured, about 25 - 28 seconds extraction, after letting crema dissipate. I think that the espresso got better as I worked down the volume/weight.
I am not sure about the Ethiopian beans and crema so no help there.
You have enough time on your hands and you will want the PID, of course not the medical kind :)
