Subject: Latte Art Question
 

I ordered two Italia Cappuccini (they differentiate between Italia and American) at the Urth Caffe in Los Angeles this past weekend and was greeted with two of the most ornate examples of latte art I have ever seen.  I didn't have a camera on me, but these were incredibly detailed.  I asked the server how the baristi did their latte art, and he confided to me that they more or less "paint" on the art with the crema.  They foam up a large circle (of white, obviously) and paint on the brown crema to create fantastically elaborate images.  Am I correct in assuming that this would not be considered latte art to the CoffeeGeek community?  I always believed traditional latte art to necessitate the exclusive use of a foaming pitcher, with the art being drawn with the foam.

Regardless, this art is really incredible and worth seeing.

It's called etching, and it's perfectly accepted and lotsa fun.
