Neal, I'm with you on the paper cup thing. At our caffe always serve "for here" in ceramic, unless paper is requested.
One of the places that is probably the best of the local roasters only uses paper cups. I don't get that. Why spend years training and $$$$ on great equipment and then serve in paper. Baffling.
Even when "for here" customers request paper I am silently cringing knowing that they are not getting an entirely quality experience.
I wish there was some sort of ceramic coated (cost effective) paper cup or something that you could use "to go" that wouldn't add that paper taste to the drink. Until then...

I was in a (gasp!) S'bux in Delray Beach, FL (Jog Rd. just s. of Morikami) the other day, and I ordered a double decaf ristretto. The barista there, an older gentleman (about 70, actually young for Delray) surprised me by saying that he could probably pull one but the superautomatic machine they make him use would give lousy crema. So I said, okay, just a regular double. He asked if I wanted to drink it there, and when I said yes, served it in a prewarmed china cup with saucer! The first time I've had that happen in a S'bux in years! (And it was a pretty good shot too). The S'bux I've been to over the past year or so have been more like assembly lines--most of the baristas can't even pull decent foam, and one told me she couldn't do a double macchiato because she was out of caramel (she had no idea what a real macchiato was, and I had to assure her she *could* fit it into an espresso cup).

Well, as one who has been known to ask for paper cups in places that have china ones for "here," I have a couple of reasons:
- the china cups are awfully heavy - more importantly, the coffee cools off too fast in the china cups. I prefer brewed coffee, usually a medium size which is 16 oz. China cups that size have very wide mouths, and the offee gets cold. Whereas paper cups have lids and it stays warm for a good long time.
