Doesn't really fit in with the Jazz and Opera mentioned, but I've been living "Sail" by Awolnation lately.  Great for getting going in the morning while getting some caffeine in me.

Thread too many pages so not sure if anyone mentioned this

But I'm going to have to go with any Vivaldi cello concerto...any of them! Something magical about hearing a cello and making coffee...especially if you're a manual coffee brewer.
