I would start with a cast iron pan, put the beans in the pan, turn the burner on and heat the pan, use a wooden spoon to stir things constantly to keep from burning and roast just past first crack. But then that is just me. YMMV!

Woks work very well for open vessel stirring. Pre heating pan in the oven at 400f helps to get things going quicker. I also use a stock pot with a lid with constant shaking.

When I was between my crapped out Z&D and my new Hottop I learned how to open pan roast. Hey, I wasn't going to give up coffee! I found the cast iron skillet too heavy for me to lift by the handle and dump my beans into my cooling device. Also with the vigorous stirring with the wooden spoon to avoid tipping the beans I was flinging them all over the place. I had better luck with an old Magnalite aluminum 3 liter sauce pan.
I got to the point where I was getting some decent roasts but with that setup on my 11500 BTU/Hr burner I was also roasting myself. I had to wear my welding gloves. They are my kitchen ones not the nasty ones from the shop.
I can't say I've reached the point with my Hottop where I'm beating my pan roasts but at least I'm not roasting my self.
