Vanilla probably works the best as it is like using a blank slate.  Like using white paper to write on with your brown pen.

Vanilla is my favorite as well, I am very sensitive to sweets.

3 cups light cream
1 3/4 cups sugar
3 beaten eggs
1/2 tsp. salt
1 1/2 tsp. vanilla
1/4 cup rum or Kahluá
1/2 cup cold strong coffee
1 cup heavy whipping cream
Heat and Beat, then Chill
Scald light cream while blending in sugar. Add slowly over beaten eggs and blend thoroughly. Cook while stirring on top of a double boiler until thickened, and chill.

Add coffee

Next add the cooled coffee, salt, and whipping cream.

Ice Cream Machine

With either electric or hand-operated ice cream freezer, use churning instruction with the freezer. Begin churning in the freezer. When almost frozen, add vanilla and Kahluá. The finished ice cream will be of a soft-serve consistency until hardened in a freezer.


Options
You may omit the Kahluá and try a flavored coffee in this recipe.

Perhaps a turkish grind? That way you get the flavor without any serious texture.

I pour a 2 ounce shot of espresso over three scoops of vanilla ice cream then blend with a hand mixer.

Wow, that sounds really good...and simple. I've been on a low carb diet for about 2 years now, and one thing I've really missed is good coffee ice cream. I used to get the Starbucks triple chocolate chunk espresso ice cream, and it was SOOOO good! Chocolate ice cream with chunks of chocolate/espresso bark mixed with swirls of espresso fudge. Oh man, that stuff was insane...

But with that simple recipe you mentioned, I could make a coffee-flavored ice cream with low carb vanilla, and not cheat on my diet. Mmmm...can't wait to get my espresso machine, now.

Oh, and yeah, I also like the taste of ground espresso sprinkled over vanilla or chocolate ice cream. You can't use much, though, or it'll have the texture of sawdust. Don't pile it on, just a light sprinkle and mix it in if the ice cream is the soft kind. Be sure to have a friend check your teeth afterwards, though. You'll look like a doofus with espresso grounds between your teeth. :)

I'd try and find plain ice cream. Vanilla ads a flavor. Green Tea ice cream with a vanilla base really throws off the flavor. Coffee and vanilla go together better, IMO. But maybe you prefer a purer coffee flavor, especially if you are trying to make a particular varietal coffee flavor. I haven't seen any plain ice cream outside of New England, but I haven't looked very hard. I usually just make my own.  I hope that makes sense. It's been a long night.
