Thanks Fellas for the recipes, I've printed them off and I can't wait to try them out when I get home from work.
I couldn't find Chocolate Syrup in any of the grocery stores (and I tried a few). I live in Australia, the nearest I could find was Chocolate topping or Maple Syrup so I am grateful for the homemade recipe.

The chocolate syrup is convenient but I found the powder to mix better once the milk is hot enough. Don't get a cheap chocolate milk powder like Nestle's Quik and also be sure not to get an unsweetened powder (unless you are adding sugar to it to make your own chocolate syrup from scratch). I had a can of Ghirardelli's in the cupboard and it worked great but I assume there are other brands available in Oz (maybe Cadubury's or Drost has something?)

Wow, I made a sugar free version of that chocolate syrup with Splenda (12 packets added to cooked mixture consisting of 1cup hot water and 1/2 cup cocoa powder and steamed it in my Europicola)

Gloria Jean's Gourmet Coffees IS indeed an American Company.
Australian stores are owned by the Australian Company Adonai International Pty. Ltd.
Currently there are 135 Australian stores—most of which are franchises; there are a few Corporate stores also.
Six stores are proposed to appear in New Zealand in the next few months.
Gloria Jean's mochas are simply made using (a regular size, being 12oz) one scoop (and apologies for the vague use of the word 'scoop', but that is what is used) of Ghiradelli Cocoa Powder, mixed in with a ristretto shot, then made as a latté.

You're right, Mimaher. Gloria Jean's has in fact recently changed their cocoa powder (used in Café Mochas, Hot & Iced Chocolates and Mocha Chillers) from Ghirardelli to their own Gloria Jean's brand Rich Ground Chocolate. The huge boxes of Ghirardelli are extremely difficult to handle in store, so this new cocoa used comes in small packets. It's a tad sweeter and less fine. The old stuff used to fly up in choking clouds. :)

It puzzles me. People here are fanatical(in a good way) about the quality of their coffee but seem willing to throw in any chocolate they find.
Chocolate quality varies wildly. While I do believe Ghirardelli is a step up from Nestle there is no reason to stop there - especially if you're going to make your own syrup. (Which sounds very cool, I'm going to have to try it.)
For baking and hot chocolate I have been using Valrhona bitterweet chocolate, 61% cacao. This stuff was recommended by a restaurant that makes a killer chocolate cake - and was credited with why their cake is so good. All my chocolate cooking with this stuff has improved - most noticeably my French Silk.
I don't only bake with this, but I've made the best hot chocolate I've ever have. I shave a couple of squares and add to a frothing pitcher. Add milk, then steam away. Then I add sugar to taste. Yummy.
I haven't tried a mocha this way, mainly because I only have a very old steam toy and I've been drinking nothing but french press recently. But next time I feel like putting a mocha together you can bet I'll be starting with fresh beans and high quality chocolate.
In the US you can get Valrhona chocolate in 8.75 oz bars at William Sonoma. Specialty cooking stores and online places also carry larger blocks.

If you go to Gloria Jean's and want the Mocha taste without all of the hassle, try their "Mudslide" flavored coffee beans. It makes a great Cappuccino. (I know, I'm a heretic.)
