Chocolate quality varies wildly. While I do believe Ghirardelli is a step up from Nestle there is no reason to stop there - especially if you're going to make your own syrup. (Which sounds very cool, I'm going to have to try it.)

For baking and hot chocolate I have been using Valrhona bitterweet chocolate, 61% cacao. This stuff was recommended by a restaurant that makes a killer chocolate cake - and was credited with why their cake is so good. All my chocolate cooking with this stuff has improved - most noticeably my French Silk.

I don't only bake with this, but I've made the best hot chocolate I've ever have. I shave a couple of squares and add to a frothing pitcher. Add milk, then steam away. Then I add sugar to taste. Yummy.

I haven't tried a mocha this way, mainly because I only have a very old steam toy and I've been drinking nothing but french press recently. But next time I feel like putting a mocha together you can bet I'll be starting with fresh beans and high quality chocolate.

In the US you can get Valrhona chocolate in 8.75 oz bars at William Sonoma. Specialty cooking stores and online places also carry larger blocks.

i obtained that same chocolate, but in ground form at williams sonoma i beleive as well...

Does anyone know how Gloria Jeans makes their Mocha Chillers. I have tried to do it, but to no avail. Can anyone help please?

two suggestions:  being in Oz, have you tried steaming your milk with Milo instead of powdered chocolate?   Its not quite GJ's but its certainly tasty!  

also, being in Sydney, have you tried single origin cocoa powder from Max Brenner on Oxford St (The Paddington end)...  its unsweetened, but you'll never go back to Cadbury!!

I personally hate starbucks mocha's or anything they have b/c it's more of a milky and sweet taste but what really got me addicted was Joe Muggs..... So I have since been on a quest to reproduce their taste (they use premium beans and chocolate) and here is what I have tried so far.

Starting out I bought:

Ghiradelli Sweet Ground Chocolate - Gave great texture but left me wanting something else.

Briefly tried:
Hershey's syrup even blending in with milk beforehand. Ended up more with chocolate milk taste that was fairly bitter.

Now I just got my:

Ghiradelli Chocolate and Caramel Pump Syrup (64oz)

I have seen the Barista use just simply this when making a drink and for some reason I have yet to reproduce it. I thing I added too much the first time so I only added half the amount the second time and added a spoon ful of the sweet ground cholate for texture then a small squirt or two of the caramel. For some reason the chocolate syrup doesn't seem to have the same taste simply by itself as I am looking for. Oftentimes I have went to local places that fix almost what I am looking for but they do not add enough chocolate so I will come home and add a scoop of the ground chocolate and it will really give me what I am looking for.

We constantly argue over where/when to add the choc in our mochas, I like to let the espresso absorb the chocolate while I steam the milk, others like to steam with the chocolate, others don't add anything to the chocolate until everything is ready....we're horribly inconsistent in that regard.  However, on the issue of the chocolate itself, we are currently using the spiced chocolate from MoCafe.  I have only heard good things from our customers and friends about the taste and smell....it seems pretty well liked.  We had been using Guittard, but that stuff can't compete ;)
