Okay, I'll be the first!
There is this espresso stand near my work. They (IMHO) make a great double tall vanilla latte. It has a hint of cocoa and nut. I have watched them make it from grinding to pulling the shot. Nowhere in the process, do they add anything. I have even watched them open the bottle of vanilla.
I have purchased everything to reproduce this, with the exception of the espresso machine. I even purchased beans from them.
I can get really close, but not quit there.
I even tried using cocoa nibs, in with the beans. But, again, just not the same flavor.

1oz vanilla  (DeVinci)
dbl shot of Caffe Vita's, Caffe Del Sol blend (203F @ 23-28 sec. extraction)
Whole milk

Classic flat white--double ristretto, single origin full cream milk textured to a velvety creamy texture, poured into 150ml ACF cup and then a rostetta on top--sheer bliss.

My vanilla latte's have a hint of cocoa and nut. Actually, sometimes it's a lot of chocolate and nut flavor. I was using Ecco Reserve Espresso and stuffing around 21 grams into a 1.75 ounce espresso at 201F. On top of that, the Ecco Reserve is aged around 9 days from roast date. The nutty flavors are really coming out at this time, but it's still very chocolaty too.

I think the main thing that makes it more chocolatey is to use a larger dose (e.g. 21 grams) and cut the shot when most of the dark streaks are gone. If you let it go too long, some of the bitters from over extraction destroy the chocolate and nutty flavors and aromas. Also, longer extractions tend to be more chocolatey. (e.g. 28-32 seconds).

My favorite is definitely the Iced White Mocha.  I didn't used to drink coffee until I bought a coffeeshop 4 months ago.  Weird, eh?  But now I am hopelessly in love with the Iced White.  We use powdered white chocolate (Gosh that's Good brand for sugar-free and Ghirardelli for regular).  I usually make it half sugar free half regular.  So I add a scoop to the cup, pull the shots and let them melt deliciously together.  Then add milk and top with ice.  Pure deliciousness.

My favorite of all time?
Ethiopia Yirgacheffe Idido Misty Valley (day 4) capp (5 oz) made with Strauss milk.
Talk about perfection.

Give me a good old cappuchino, with northern italian-style espresso and whole milk. *sighs*

A lot of customers where I work really love an almond white mocha, I like it too but it's way to frou-frou to be a favourite;-)
