Quick Espresso Mousse
With all that is going on, this quick dessert, made with chilled espresso is perfect for a gathering.
Ingredients: 1-3.4oz. package of instant vanilla pudding 2 oz. of chilled espresso 14 oz. chilled heavy whipping cream
Directions: In a medium bowl, combine pudding mix, heavy cream and chilled espresso. Mix at a low setting, until all ingredients are combined, then turn the mixer off and scrape the sides. Continue to mix the mousse at a medium setting until it starts to thicken. Once it thickens, turn the mixer up to a high setting and allow the mousse to get firm.
Turn the mixer off and place the mousse in serving dishes. Let it chill for one hour in the refrigerator. Once the mousse is chilled, top it with whipped cream and grated chocolate.
This recipe makes 4-6 servings.
You can substitute the 1-3.4oz. package of instant chocolate pudding for vanilla and make mocha mousse.
