Subject: Homemade Coffee & Chocolate Truffles
 

Treat that special someone Christmas with these delicious coffee and chocolate truffles. They cost a fraction of the price of their shop bought counter parts, taste amazing, are super easy to make and homemade gifts always show that you care.

Make sure you use cooled espresso from your commercial, traditional or domestic coffee machine for the best gourmet coffee flavour!

Ingredients:
8oz of good quality dark chocolate minimum 70% cocoa solids chopped into small pieces
120ml double cream
28g unsalted butter chopped into cubes
2 tablespoons cooled espresso
100g of cocoa powder sweetened or unsweetened to taste
Finely chopped nuts optional

Method:
Place double cream and butter into a pan and place on a medium to high heat
Heat until the butter has melted and the cream begins to boil then remove the pan from the heat
Place your chopped dark chocolate into a heatproof bowl
Pour over the cream and butter mixture and leave for 30 seconds so that the chocolate begins to melt
Stir the chocolate and cream together slowly until smooth, if all of the chocolate has not melted then place in the microwave for a few seconds until completely melted
Add 2 tablespoons of cooled espresso
Cover the bowl with cling film and place in the fridge overnight to allow the mixture to firm
Once the coffee chocolate truffle mixture is has been chilled until firm, use a spoon take a small amount of the mixture and place into the palm of your hand and roll the mixture into a ball
Place the ball into the cocoa powder (you could also use finely chopped nuts, shredded coconut, shaved chocolate or even melted cooled milk chocolate to contrast with the flavour of the dark chocolate, it is entirely down to personal preference) and place onto a plate
Repeat the process until all of your coffee chocolate truffle mixture has been used
Store your coffee chocolate truffles in the fridge where they should keep for around 2 weeks

Thank you, I'm glad you like the post. It's a great recipe that is very simple to make, the only thing that's hard is trying not to eat them as you go along!

I have many more recipes where this came from.
