Absolutely delicious! The combination of freshly ground coffee, chocolate and coconut work wonderfully together resulting in a lovely treat to enjoy with friends.
Ingredients – makes approximately 35 large cookies
6 teaspoons finely ground premium quality coffee 700g chocolate chips 450g chopped macadamia nuts (optional) 198g granulated sugar 210g flour 227g butter plus extra for greasing 5 eggs ½ tsp baking powder ½ tsp salt 55g shredded coconut
Method
Preheat the oven to 180°C or equivalent
Grease 4 large baking sheets with butter
Place half of the chocolate chips and butter into a heatproof bowl over a pan of simmering water, stir until smooth then remove from the heat
In a separate mixing bowl add the eggs, sugar and ground coffee and beat thoroughly then stir into the melted chocolate
Sift in the flour, salt and baking powder and stir thoroughly
Add the remaining chocolate chips, shredded coconut and macadamia nuts (if applicable) and fold in
Dollop 1½ to 2 tablespoons of the cookie mixture onto your greased baking tray leaving around 3 inches in between each one
Bake for 11 minutes but ensure you check your cookies after 7 mins and keep an eye on them throughout cooking
