It's traditional for us Brits to celebrate Shrove Tuesday with pancakes and lots of them! In fact, Shrove Tuesday is more commonly referred to as 'Pancake Day' in the UK. We like to indulge before Lent begins and pancakes are the perfect way to treat ourselves. As Shrove Tuesday is fast approaching, here’s a lovely coffee themed pancake recipe to try.
Cappuccino Pancakes with Mocha Syrup
Ingredients - makes 4-6
Cappuccino Pancakes 340g/12oz plain flour 14g/ ½ oz baking powder 14g/ ½ oz finely ground coffee 28g/1oz granulated sugar Pinch salt 1 egg 240ml/8fl oz milk 28g/1oz butter – melted Vegetable oil for frying
Mocha Syrup 120ml/4fl oz strong Americano coffee 55g/2oz cocoa powder 55g/2oz cup granulated sugar Pinch salt 1 tsp vanilla extract
To make the Pancakes Add the plain flour, salt, sugar, baking powder and finely ground coffee to a large mixing bowl and whisk ingredients together. Make a well in the centre and add the milk, egg and butter. Whisk until thoroughly combined into a smooth batter consistency.
To make the Mocha Syrup Over a medium-low heat, add the Americano coffee, salt, sugar and cocoa powder to a small saucepan. Bring to a simmer and stir for approximately 5 minutes until the syrup begins to thicken. Remove from heat add vanilla extract and stir, great served hot or cold.
To Cook the Pancakes Dip some kitchen roll in the oil and wipe around a large frying pan. Place the pan over a medium heat and heat for a minute. Add a ladleful of batter to the centre the pan and immediately begin swirling the batter around to coat the base of the pan in a nice smooth layer. Cook the pancake for 30-40 seconds each side until golden-brown.
To Serve Serve pancakes with a scoop of Vanilla ice cream and drizzle with Mocha syrup.
