Thanks Becky. Now I have another question. Have you ever tried using extracts for flavoring, like pure vanilla or peppermint, etc.? I think I am going to experiment using some over the coffee grounds before I brew them and see what it does. Wish me luck.

Hey, about flavors, Being a coffee enthusiast, the only way to flavor coffee is after it has brewed and then adding syrups. When coffee roasters sell flavored beans they are actually placing chemicals in your coffee and the majority of the time use low quality beans and flavors to cover up their poor taste. Some good syrups to try are Monin, (It's completely natural) and Davinci. Mark

While I like using syrups for some drinks and I agree that using flavored beans is a no-no, I also would like to suggest that using freshly ground herbs and spices is the way to go if you like flavored coffee's.
They should be just as freshly ground as the coffee (right before brewing) and only paired with the best quality coffee.
There are a couple of companies out there that sell flavoring for coffee beans.... I don't think it will be to your advantage to buy from them because you have to buy a minimum of 7.5lbs of one flavor..(adds up to about a gallon of syrup..)Price ranges from $12.00 a pound and up... You could probably use vanilla extract but I don't know how it would taste... Most flavoring is 3% w/w (weight to weight) which is 1/2oz of flavoring to 1lb of coffee.... This would be a good starting point with the vanilla extract...

Though Monin uses all natural ingredents, Devinci doesn't....So I would say using Devinci add chemicals to coffee...
Maybe the roaster you know use low quality beans, most don't.... Many thing can cause coffee to taste bad.... How it is stored, how many imperfections, the handling, the roasting, and the brewing all have effects on the taste.... You have to use a light bodied coffee, with flavoring, so it doesn't effect the taste of the flavor.... It's hard to cover up the bad in coffee using flavoring....It would be the same as trying to cover up the bad using Syrups... Adding flavor to the beans is no different then using Syrups....(Devinci or Torani) They are tested and approved by the FDA for human consumpion just like the syrups are... It also gives you the choice of what type of sweetner you would like to use.... Syrups are mostly sugar....

I sell flavored coffee beans and I also sell flavors to add to coffee. I suggest buying flavored beans from a reputable retailer. Beans are flavored with a syrup usually natural and artificial flavoring. The Syrup is mixed with the warm beans out of the roaster. This ensures that the syrup is absorbed into the bean. You can tell how old the syrup on the beans is by looking at them. Freshly flavored beans will be very oily and wet. My customers enjoy my flavored beans because there is an "Aromatherapy" associated with the whole process of grinding, brewing and tasting. I only use the finest Columbian Excelso medium roast for my flavored beans. Good luck!
