Posted Mon Aug 26, 2013, 1:50pm Subject: Chocolate & Almond Cake with Sweet Espresso Sauce
If you’re a fan of coffee, chocolate and nuts, then this is most certainly the cake for you. Delicious gooey chocolate with the light flavour of almonds, all enhanced with rich aromatic espresso sauce, simply divine.
Ingredients – Serves 8 3 medium free range eggs 340g caster sugar 185g good quality dark chocolate 185g unsalted butter, softened at room temperature 200g self raising flour 140g ground almonds 250ml freshly brewed espresso – add 2 tbsp caster sugar to sweeten Whipped cream to serve
Begin by preheating the oven to 180°C
Grease a 20cm non-stick spring-form tin and line with baking paper (base only)
Add the chocolate and butter to a saucepan and gently heat stirring continuously until completely melted
Place the caster sugar and eggs into a large mixing bowl and using an electric hand whisk, beat until pale and thick
Fold the flour, chocolate and almonds into the eggs until smooth
Spoon the mixture into the tin, place in the oven and bake for around 50 mins or until just firm
Remove from the oven and leave to cool slightly in the tin for 20 mins or so
Add the espresso to a pan, bring to the boil then simmer for around a minute until a syrup like consistency is achieved
Remove the cake from the tin and discard the baking paper
Slice the cake at the table and serve warm with whipped cream and a drizzle of the hot espresso sauce.
