Deliciously smooth and creamy fudge with crunchy pecan pieces and rich coffee flavour, this recipe is incredibly easy to make. This moreish fudge is perfect for serving alongside coffee or even just as a treat on its own.
Ingredients 225g chopped pecans 675g dark chocolate chips 420ml of sweetened condensed milk 30ml strong freshly brewed black coffee 1 tsp ground cinnamon Pinch of salt 1 tsp vanilla extract
Line and grease (with butter) an 8 inch square tin and set aside.
Place the pecan nuts in microwaveable bowl and cook on high for 3 minutes. Stir after each minute. Remove from the microwave and set aside.
Add the chocolate chips, condensed milk, coffee, cinnamon and salt to a large microwave-safe bowl and cook on high for 1 minute, remove from the microwave and stir until smooth. Add the pecans and vanilla extract and stir thoroughly. Pour into the lined tin and spread evenly.
Cover the tin with cling film and refrigerate for around two hours until firm. Remove from tin and cut into inch squares. Store in a biscuit tin or plastic tub at room temperature.
