Hey guys,

Cafe Veritas is open for business as of noon tomorrow at 480 St. Laurent (at the corner of Notre Dame) in Old Montreal.  I'll be working the Synesso mondays through fridays for sure, so please come in and say hey.  Cheers!

Passed by last week ! had a hard time finding the place. Once i did, the decor was impressive and the food presentation is very appealing, I will defiantly go back to have lunch there

yeah there's been a struggle over signage with Old Montreal, they're very restrictive about what can and can't be done.  Hopefully soon that will be resolved.  That being said, it was a wonderful first week.  Thanks to everyone who's come by and had a chat with me, and for the feedback on the coffee and menu as well.  

I'm interested in starting a monthly evening of coffee-related doings.  More organized than the coffee jams that have been going on, but casual enough so as not to be intimidating.  Tell me what you guys want (cupping? latte art? bringing in your home roasts?) and we'll go from there.

On a sidenote, it looks like we'll be closed for the holiday tomorrow, bonne saint jean!

I stopped by as well last week, and I had to double back because I missed the sign :)

Nice place, nice ppl (had a chat with Anthony) and very nice coffee :)

Only had 1 but since it's right next to where I work, I'll definitely head there more often.

GL with the rest of the summer!

PS. I'm interested in anything, Latte Art, cupping, home-brews, I'll just need to watch my caffeine level :)

I paid a visit to the place too.  Anthony and the rest of the crew were very nice.

It's great to have yet another place serving quality drinks and bringing in new blends.  It was also fun talking to someone who knows his stuff.

The shot I had from the Epic blend was very smooth, keep it up!

Third time i go and it seems to be going downhill...Temp is off and it seems like the tamp is soft or the grind is not well calibrated . Hopefully this will shake them up a bit, becouse from what i hear and tasted Caffe In Gamba is on the ball

Hi John,

Sorry to hear that you haven't enoyed your experiences here, and it's really too bad you declined to give us feedback onsite, it's a lot easier to find and fix hypothetical problems in the moment instead of a few days or weeks onward.  Taste is subjective, and as many will attest I love spending time talking coffee and debating the merits of the many approaches to pulling and serving espresso.  it's possible In Gamba just suits you better, JF and I have very different philosophies about how to run an espresso bar.  

But as it is, without any context, your speculation is unfounded.  The Synesso allows us to maintain an extremely stable temperature, and it's unlikely that it fluctuated enough to affect one of the three coffees you had here, given that it hasn't soured or scorched a single one of the hundreds I've tested since helping Sam open the shop.  We go to further lengths than most shops to ensure our grind is properly dialed in and that coffees are consistent from one to the next.  Every shot is pulled by myself or Sam (who is in my opinion one of the top three baristi in the city now) and is manually timed without exception.  We don't serve anything we're not 100% happy with, and that's why I resent and take exception to you implying that we're backing off from the high standards we set for this city.  

We've been receiving fresh coffee weekly now in one pound bags instead of five pounders to cut down on the amount of time the beans are left exposed before grinding.  We've begun serving our single origin coffee via french press because we felt our current drip system wasn't doing justice to the quality of 49th's roasting.  And currently we're preparing to upgrade our grinders to become even more consistent from cup to cup and cut down on waste.  

I welcome criticism I can use to improve and learn from (these forums have proven invaluable for that) but it's difficult to take one contrary voice at its word without any context.  If we're lucky enough to see you a fourth time and I'm working, you're invited to come back behind my bar to see the grind we're using, to learn why we tamp harder than most shops, and to see how easy it is to control variables with the Synesso.  I love talking about this stuff (and usually I learn a lot too) but I get testy when our work ethic and our committment to quality is called into question.

I want to congrats you on being the first geek member that finally got me out of my coffeegeek closet and write my first post. When I enterd the specialty coffee world 5 years ago i promised myself not to post any comments on this site and remain neutreal on numorous topics and read posts as an observer.This is due to the fact that I make my livng selling coffee and other coffee related products.


Cafe Sante Veritas is a cutting edge 3rd wave coffee shop that has now been open for aprox 5 months and is second to none as far as equipment - baristas-and dedication to coffee exellence is concerned.A little insider info for ya Anthony Benda not only placed 3rd in the CNBC but was also the preferd baristi of the CNBC judge trainers who also represent companies that are the pillars of the SCAA pouring coffees for them in the mornings when they got there or in the afternoon when they needed a little boost .Not too bad for somebody that never competed in a barista competition neither reigional or national.I am sure that with a little more competiton experience he can climb even higher.

The Synesso along with La Marzocco are 2 Super Duty espresso machines that have made their name around the world as maintaining  the MOST stable temperature in the buisiness wich to choose is a matter of personal preferance


Last but not least 49th Parallel Coffee roasters along with the people behind this companys reputation speeks for its self.

I am a regular client of Cafe Sante Veritas dropping by at least 2 to3 times a week and always have  one doubble espresso and one milk-based espresso beverage every time i go there hardly ever been dissapointed.Dont forget John that nobody is perfect. I have taken multiple work shops in many SCAA orSCAA sponcerd events and in 1 of these work shops Iwas repeatedly instructed that a perfect score of 6 is  impossible to attain everytime a barista pours a shot. Veritas is one of the few coffee shops in town that  TRY to achieve this every time they pour one.Maybe you think its easy but I would like to see you try to do better. Its easy to hide behind your computer and be a critic but I would like to see you try to bring day in day out what coffee shops like Veritas-Gamba and Caffee Artjava do.
