If you live in Winnipeg it's time to get happy. Parlour Coffee opens on Saturday, 468 Main in the Exchange, serving 49th Parallel and Phil and Sebastien. They are doing aeropress, pour-over and Chemex brewing on top of espresso and the sneak peak I had on Sunday and today was killer. 10am Saturday, hope to see you there.

I was there yesterday.  Great equipment and detail to there product.  My espresso was great.  Finally good coffee in Winnipeg.

I was at Parlour a couple times this Christmas (home for the holidays) and they are doing it right. There is a lot of attention to detail, in both the coffee and the environment of the shop. Everyone was friendly and I think doing a good job of explaining the basics to the curious.

If you go, just sit and listen to the barista's interact with customers for a while. It will tell you something significant about Winnipeg coffee culture (cough*timhortons*cough). But like most Winnipeggers and new culinary experiences, they wanted to know more about the brew methods etc.

Definitely go if you get a chance.
