What do I expect to hear is those experienced baristas in Italy, who can make a really good espresso.
Probably they do not like to talk in a forum on internet, probably they do not understand what others are tlaking about.
I suppose, in most cases, they can make good espresso, but never think how and why. When we talk to them, we cannot talk about the theory, but only detailed, or practical moves of each step of brewing.
I met a very young Italian boy, who can use a really terrible small home machine to make great espresso, best for their blend of beans. He was even first time to use that machine. For the short time, I cannot talk to him, neither to ask any question because I knew that he could not explain how and why. He can simply do it greatly.
That is a real Italian barista.

You are most certainly correct about the Italian barista. They just do it and really probably don't know how or what they are doing other than what they have learned.
