Hi Dode. I haven't bought from this shop, but i order online from a company called Has Bean. They only roast the beans when you order them. Great service and even better coffee. Give them a try.
I should be going into Dundee later in the week so if I get a chance I will pop in there and see what the go is.
Otherwise, I guess you will just have to find out what you like through trial and error, and having a look at what others think of the various micro roasters in the UK. Hasbean which have already been recommended are highly regarded on this site, although I haven't tried them. I like the The Bean Shop in Perh, and they are really awesome to deal with as far as obtaining freshly roasted beans quickly goes.

They roast their beans using modern equipment but it should be mentioned that the shop fittings can be dated back to 1868, when the shop was established - even then some of the fittings had been bought second hand. It's been under the ownership of the same family throughout it's history. It is certainly like stepping back in time seeing the coffee being weighed and ground as it was more than a century ago!
I haven't been there for years but I particularly remember the Papua New Guinea as a nice one - I'm not a connoisseur, I like strong coffee with milk and sugar but this certainly has enough body to make a nice rich mug."
