I'd recommend trying a couple of local roasters in Dallas. Well Coffee (served at Bolsa and Smoke) is one and the other is Cultivar Coffee (have their own café on the east side of White Rock Lake). I too am not a huge fan of Cuvée coffee. They use it at the Coffee 'N' Cream locations in the north part of the Metroplex.

You are welcome. Since posting, I have discovered Drip Coffee on 4343 Lovers Lane bet. Preston and the Dallas N Tollway. The only shop in Dallas that I will go to, until someone suggests better (uinlikely). See my recent post, if interested.
