Are there any coffee shops in central tennessee, kentucky, Souther Indiana or Southern Ohio that use Ditting grinders for press coffee of other non espresso types? If so I like to hear from you and maybe pay a visit to your shop.
I'm not in any of the states you mentioned but we using a ditting for everything from cupping to french presses. Love it, love it, love it. Great grinder.
I think this is a completely innocent post. I know in a previous thread, Waynen was looking to buy a Ditting for personal use and was inquiring about one in particular that he was interested in. He probably wants to visit coffee shops that have Dittings to maybe get some insight on the grinder. Or something like that.

I did buy a Ditting KF804 on ebay. The grinder is like new but I think it isn't working as it should. I've compared it to a few other Dittings and I still feel it isn't right. I sent a sample to Ditting and they say it's fine. Maybe I'll buy another set of burrs, I don't know yet.
When I got it and tried it out of course, at the french press setting, which is what it's for, it just didn't have the grind consistency that I thought it would. Now by that I mean the descriptions of the legendary Ditting grind consistency. Now I qualify that by saying, that's just my perception of the descriptions I've read here on Coffeegeek.
I posted a request for info on these, here on the geek a while back and got some responses. I sent some samples to a chap up in Vancouver who had a 804 that had been gone through at the factory and a sharpened set of burrs put in it. He didn't think it was right either. He subsequently sent a sample of his to me, and I have to concurr. The fines level maybe a little excessive due to the newness of the machine, according to Ditting.
I sent samples to Ditting which includes the turkish setting. They say the Turkish is perfect so that means the grinder is fine. I don't have any claim as I bought it used and the warranty is not transferable.
Right now I'm waiting for a sample from a chap in southeast Texas who just bought a set of the new machined burrs and will send me a sample of his. If there is any significant defference, I'll probably buy a new set or trade my burrs in for sharpened ones.b
So, if it's perfect at a pulverized grind setting, it's "fine"?
That doesn't make sense from a technician's standpoint.
If your grind consistency is uneven, and you're getting a good amount of dust, I would venture almost assuredly that you need new burrs. The fact that the grinder is used plays well with that theory.
You can inspect the burrs yourself, and I'm a little surprised that you haven't already considering the issue you mentioned. If there is any imperfection at all, it could be enough to throw something off. If the burrs are not razor sharp, the coffee will not be "cut", and the result will be an inconsistency of grind.
If you can just take a clear, close-up picture of a sample spread out on a white sheet of paper, it should be easy enough to tell.
