Okay, so I went to Mike Mckim's cuvée coffee roasting company today. I went expecting to learn a few things about roasting coffee and what not. Boy was I wrong....this guy goes above and beyond to teach people how things are done.
First off, he made me coffee to get the morning off to a good start. We had the Ethiopian Harrar, which is by far one of the best tasting coffees I have experienced. It has this amazing and intense blueberry flavor. Mmmmmm.
Next he moved on to roasting, explaining the basics as he went along using his vintage roaster, making sure I understood each aspect of the roasting process. He roasted three different batches of the columbian bean, all very similar with just slightly different changes. We cupped these three batches of Columbia along with a batch of Panama (my first cupping experience by the way, he went through all the steps of cupping too). It is interesting to see how such a small change in the roasting process can effect the flavor. Next we cupped three completely different beans. The Sumatra (a darker roast), El Salavador (a mild roast with a touch of sweetness), and again the Ethiopian Harrar (I can't get over how good this is). They were all exceptional, each with its own distinct taste.
Mike honestly has a love for what he does. He spends a great part of his time picking the best green beans and then tweaks them to perfection. He is working on setting up an espresso bar and offering free barista lessons out of his shop for whomever is willing to learn. But above all he is eager to further the coffee community in Houston and in Texas in general. We use his beans in the coffee shop I work at and all I get is compliments on how good his espresso beans (Meritage) are, and personally I think they are great. I drink a latte everyday I work with his meritage beans, yum. Soooooo......
If anyone has the time to make it to Spring, Texas (just north of houston) then I say it is worth the experience.
