Thanks to everyone that came out to The Grind today! All told, over 50 people came out, everyone from shop owners to people who don't drink coffee. It couldn't have happened without the help of so many from here and in the community. So many shops donated time and coffee, and so many baristas offered up their skills and expertise. Thanks again!

Urgent. It is Thursday 7-31 9:24 Am. I am sitting in PPG Place with an hour to kill. Where can this Brooklyn boy go on foot to get a nice espresso?

Frick Building Lobby @ 437 Grant Street- just walk up the hill on 5th avenue to Grant Street.  Our downtown shop is there- we serve up triple ristretto black cat daily... it's yummy.  Check out our website for a google map if unfamiliar with the triangular grid that is downtown pittsburgh.

Made it back in to 21st st on my way to pick up supplies today and was pleased to experience the changes Luke and Co have made.  Despite my mild delirium from a recent wisdom tooth extraction I was able to decipher the complex menu options and order a cappuccino. I am happy to report that the milk now being made is much more to my liking as it is not as dry as it once was, yielding a velvety smooth and totally even texture. I'm a fan of the proportions now being used as well. The king crimson 'Kool-aid' iced tea was also a nice treat. Thanks for not letting me leave without my beans and credit card too!

If you haven't been into 21st st since the changes, do make a point to get there.

Respect.

P.S. Can one of you guys open up a shop a little closer to my house so I can get a job making real coffee?

When are you going to get your priorities right and move closer to one of their shops?

I'm guessing it's your dry sense of humor... but one size (6oz) cappuccino <> complex!

Glad you enjoyed it... and where's our new store supposed to be now?

mayhew: That is a pretty good point you raise. Why on earth haven't I already sold my house and packed the wife and dogs up for the apartment above Aldo? I'd save hundreds of dollars on gas and I wouldn't have 3/4 of an acre to mow every week.

Dry humor. Oh yes. Guilty as charged. I've used my humor as a desiccant for flooded basements and damp closets. It works better than phosphorus pentoxide.

New location: Southpoint/SouthpointII.    I still haven't settled on a business proposal I'm happy with yet. The profitability estimates sit inside a pretty wide margin due mostly to not knowing what realistic rush hour production volumes can efficiently be.    Being familiar with the volume I can handle personally (drive-thru business model) doesn't translate directly to the application I am thinking of.  In addition, I have no idea what kind of time food service adds to your average transaction.

Food service times depend on what exactly you're serving.  Sandwiches?  If so, made to order or premade and already wrapped?  Soup?  Make it yourself or buy pre-made?  Pastries?  Make 'em yourself or pre-made?  Etc.  Our experience is that we spend about as much time prepping food and serving it as we do working the bar each week (40 hours prep, 40 hours baristing)--so it adds a lot, plus the cost makes margins shrink "like a frightened turtle".

But it tastes good, and at least where we are, it is expected.

Does anyone know anything about Three Rivers Coffee Roasters?  (http://www.threeriverscoffeeroasters.com)  They carry Daterra and FVH, but I don't think I know anyone from their operation.

That's interesting that they carry Daterra and FVH. They're located in the south hills, maybe some of the south hills shops know him? The shot of espresso looks like an egg yolk poured on top :-X
