I'm sure there are several threads about Seattle already, but I'm going to be visiting my sister out there soon with my family and I'm the only coffee person among them, so we'll probably only be able to get to one or two shops while I'm there. I really want to see what the whole NW USA coffee experience is like (I've lived in Missouri my whole life). So yeah...what would be the one or two places that a coffee nerd absolutely not miss during a trip to Seattle?

I second the Vivace recommendation. I was there last month (in Seattle for work) and went to the store on Yale. They had one of their 3-group Synessos set up with Dolce and the other with Vita. I'd recommend trying both.

I spent a week in Seattle visiting at least two coffee shops per day, based on recommendations in previous threads on this site.
From that experience, my favorite straight shots of the trip were pulled at Victrola. It was so good that I went back three times and the shot was perfect every time.
Stumptown would be my next pick.
If you are more of a cappuccino drinker (I go for straight ristretto shots myself), Vivace is the place to go.
Best option, hit all three places - they are located in the same neighborhood, Capitol Hill, which is a great neighborhood to stroll and soak up the vibrancy of Seattle while sampling the "whole NW USA coffee experience" that you are looking for!

I third Vivace and Victrola. I was in Seattle two weeks ago. The espresso and cap were very good at Vivace. Beware the cafe on Denny Street has moved and no longer there. I was at Victrola late morning on a weekday when it was not busy. Not only I had two excellent macchiato, the roaster gave me a very informative tour of the roasting area and pointers on home roasting.
As aside, I also went to Visions Espresso Services to see the GS3 and Vivaldi machines side by side and picked up some accessories. The folks at Visions pulled shots from both machines so I can compare. They are very professional and friendly people.
