This wet processed Ethiopian Sidamo was a really nice S.O shot. I was impressed! Don uses the WDT to distribute the grounds before tamping. He likes to use a triple basket because of the large space between the screen and the grounds.

After a few minutes of brew time the halogen lamp is turned off and a cool wet towel is used to cool the lower bulp and move the coffee back down. It was a nice classic cup of coffee where the coffee taste can only be described as coffee.

This is definitely a good place to check out if your in the neighborhood. I had a very good espresso there. The crema was what I was hoping for after being disappointed so many times before at other places. The shot tasted great and I'll definitely be back for more. My wife also had a very nice cappuccino. The only downside is that its not open very late. But there is a comfy couch to sit down and enjoy your drinks.
