We did a field trip to handsome roasters where they made us so much good coffee, at night, and were sooo nice to us! Two coffees were served on the drip, then we did a cupping of 12 different roasts, and then pulled shots behind the bar on the espresso machine. Also, we invited an artist to come and do Espresso Airbrushing -

I visited this beautiful, elegant, and simple shop for the second time yesterday. My experience was like most specialty coffee boutique visits with the exception of knowing this one is owned by 3 world class coffee dudes. What's my point? I wouldn't question their decision on batch brewed coffee because it fits their specific coffee & effectively distinguishes their coffee's unique flavor profiles. It may not work for every coffee shop. The other reason I don't hate on their decision is because having a Hario V60 myself I can plainly see the inconsistencies it brings within a shop that desires to run smoothly and effectively. The variables are countless: Grind size, grind consistency, coffee to water ratio, water temperature, pour speed, pour direction etc. Lets be real, whenever a specialty shop offers manuel brewing methods I jump on it to put the barista's skills to the test(even if I'm paying $5), however the question comes down to being entertained or experiencing an amazing cup of coffee.
I'm relatively new to coffee and my 2 cents may be monotonous and mundane, however I'm giving all i got to be enveloped in coffee culture. Any tips are much appreciated.
