My wife went to Chromatic this weekend when she was in San Jose/Santa Clara. Unfortunately, I wasn't with her, but she said she liked it pretty well. She did feel that the flavor of the cappuccino was a bit too "in your face" for her tastes. She tends to like mellower comfort food blends, which is what I mostly make at home.
She did bring back a bag of Emperor espresso for me (thanks honey!), which we've been drinking the last couple of days. It seems quite sweet and fruity, far different from my usual Red Bird or Belle blends. It's almost citrusy, at least the way I'm making it. I'm dosing about 19 grams, brewing at 203 on the brew boiler PID. The shot starts slow, but speeds up and blondes a bit faster than I would like. Final output is about 24 grams. Any suggestions for taming the citrus a bit and maybe getting it to more of a sweet berry flavor?
