Subject: Pablo's Coffee?
 

Just noticed the ad for Pablo's Coffee on CG homepage and discover it's right here in Denver!  Has anyone tried their coffees and what did you think?  I may have to do a field trip for some research on this.

Well I went and investigated today, and really enjoyed the experience at Pablo's Coffee.  There was only one man behind the counter, 4-5 outside enjoying a coffee and a mild afternoon, 4 inside chatting quietly.  Told the barista I'd seen Pablo's on Coffeegeek and he was pleased but surprised, saying the ad was intended for their mailorder customers.  How nice a local noticed, and when I ordered an espresso doppio macchiato, he pulled it with finesse, and declined to charge me, stating I was here for a taste.  It was smooth, rich, wine notes, not over-roasted/burnt, nice layer of crema.  

Side note:  I had Novo's espresso the other day at a local shop and it did taste over-roasted/burnt, rather *$ to me.  Not my taste at all.

Anyway, back to Pablo's, really nice chat, got to see how the roaster would work on Tuesday when they roast, saw bags and bags of raw coffee and was invited back for roasting day when it smells really good in there.  So, he got busy, 3 stacked up at the counter, not crazed at all those people waiting, just helpful and friendly with all.  I left with a 1/2 lb. espresso roast (a blend of 4 beans he says, one Brazilian which lends a "kick") and a coffee card.  Only problem, I forgot the very nice man's name!

Well, I'll be going back and looking forward to a lovely repeat of that espresso tomorrow morning in my own kitchen.  Go!  you'll like it!

Just curious where you had this bad experience with Cafe Novo?
Perhaps it is the shop you should be naming and criticizing,  not the coffee.

I don't think it fair to judge a coffee roaster by the shop brewing the coffee.  The best coffee can be turned into toilet water if not brewed with care.  I try to judge roasters by how the coffee works for me at home after I have learned to work with a particular blend.  I am biased toward CN as I have spent a lot of time trying roasters in the Denver area and all over the country and have found none better at their craft.
Just my opinion.

Hey Loring, not trying to step on anyone's toes here.  Just reporting my experience, that's all.  I had CN's espresso at La Dolce Vita in Arvada, and a new shop on 38th in Wheat Ridge.  The roast isn't to my taste.  Hope that's less offensive.  Everyone has their own opinion, that's mine.

Yes, I think that is more appropriately stated. That's my opinion.
If you live on the westside of town, shoot me an email, I live up coalcreek canyon and would be happy to have you up for some espresso.  I am much less offended by criticism of my homeroast coffee than Cafe Novo's.
