Making coffee with a Chemex is like a science experiment. This is probably the first coffeemaker that you will own that will inspire you to keep a log of brewing variables. After initial experimentation, I am now brewing the best drip coffee that I have ever tasted.
The glass imparts no added taste to the brewed coffee, and is easy to keep extremely clean. The wooden collar and leather tie while aesthetically pleasing, get in the way when cleaning the Chemex. They are best removed entirely for cleaning.
The paper filters used with the Chemex are very high quality. Others have written that coffee brewed in a Chemex has a "squeaky clean" quality to it, and I would have to agree. It makes coffee brewed in a FP "thick" by comparison.
Coffee brewed in the Chemex should be immediately transferred into a thermal carafe as the the glass Chemex body provides little to no heat retention. Being a vessel made entirely of glass, the Chemex requires to be handled more carefully to avoid breakage.
