Stepless, Really Fast, Doser (of course i dont actually use it to dose), pretty much everything
Negative Product Points
For some people that doser would be a negative, but I wanted one, For some people the stepless wormdrive would be an issue. This grinder is an "espresso" only grinder, it would take a long time to switch to a french press grind. The throat between the hopper in the burrs is pretty big so a few stray beans will get caught in there.
Detailed Commentary
After doing many hours of research on grinders I decided on the Cimbali. One of the main reference points during my decision was Dan Kehn's grinder Review, it put the Cimbali against the Mazzer Mini, Macap M4, and the Mazzer Mini E doserless. Before I even started looking at grinders I thought I had my mind set on a Mazzer Mini, because it gets so much high praise on this site. But then when i started getting into the knitty gritty I found that I liked the Cimbali's features more.
I wanted a doser because i think it helps agitate the grounds so i dont get major clumping. I like the 64mm burrs, this thing is uber fast when it comes to grinding for a double I liked that it was totally stepless, this would give me total control of the grind setting It is really well built, as Dan Kehn said, Its like "bruiser" grinder
The doser is built really well, and sweeps really clean. But i did do the velcro tape mod to the vanes so it clears the thing out.
All in all its a perfect espresso grinder, but if you plan on switching between French press and espresso I don't think it would be a very good choice
